iPhones save photos as HEIC by default because it compresses better than JPG at the same quality. The trade-off is compatibility — many Windows apps, older Android devices and websites either can’t open HEIC at all or handle it poorly.
Converting to JPG trades a little file size for near-universal compatibility, which is usually the right call whenever you are sharing a photo outside Apple’s ecosystem.
The most frequent trigger is emailing or uploading an iPhone photo to a website, form or older Windows program that rejects HEIC outright with an unhelpful "unsupported file type" error — converting first avoids the back-and-forth of figuring out why the upload failed.
It also comes up when sharing photos with someone on Android or an older Windows PC without HEIC support installed; JPG guarantees they can simply open the file without installing anything extra.
At quality 85 and above the difference is generally invisible. HEIC is a more efficient format, so a same-quality JPG is often a little larger, not smaller.
By default nothing is carried over, for privacy. Tick "preserve EXIF" before converting if you want that metadata kept — this is a best-effort feature and may not work for every photo.

This shouldn't happen — the converter reads the photo's stored orientation and applies it during conversion. If you do see this, try re-exporting the HEIC from your phone and converting again.
